Greetings!


We are a new, 100% independent bakery/cafe in Brockley, focused on baking real bread (naturally fermented), croissants, and a delicious selection of classic Danish pastries. We have been open one week and have been thrilled -- and surprised! -- to discover that we are very popular. Each day of trade we have sold out of our entire breakfast-pastry, bread-to-take-home and lunch selection. We are now quite clear on how many staff we need to get the operation under control, calm and collected. We have great equipment and a beautiful Sveba Dahlen stone oven, and a woodfired oven from the Stonebake Oven Company that is loads of fun to play with. We are sure that with passionate and committed staff, who share our values that the best and tastiest things are the simplest, we can run a thriving and profitable operation for the good of the neighborhood and beyond.


We are now looking for a couple of key personnel:


- a passionate baker who can manage the sourdough-breadbaking and pastry volume we expect. Experience in natural fermentation, sprouting of grains, and shaping & baking breads is essential. Experience with lamination of both french and danish patisserie is also very valuable.


- a trained and focused pizza cook who can prep, assemble, and bake the sandwiches and woodfired pizzas that we make daily to order.


Both these personnel are sought for start ASAP. Training will be given, but you must be confident and self-possessed, and welcome the challenge of running the operation and production of a high-quality startup business. Fluency in English is also essential.
