Has anybody got a tried and tested recipe for battered fried fish?

My (French) brother in law is addicted to British fish & chips and now wants to make this in his alpine restaurant, serving a mix of locals and Brit skiers.

There are many recipes online but thought I'd seek out the collective wisdom of the EDF gourmands.

I'm trying to convince him to serve mushy peas as well.

only made it once this year and not wanting to ruin decent fish, I found Felicity Cloake's article useful. There's a basic batter recipe at the end which worked really well. http://www.theguardian.com/lifeandstyle/wordofmouth/2011/sep/29/how-cook-perfect-battered-fish

I've never had an issue late at night in the areas you talk about and I've been around here for 18yrs (before I moved I had the same concerns as you). Go visit your areas late at night at different times for your own peace of mind (I did)
