A starter-free method is to make normal dough, let it rise and then put some aside. Make the remainder into normal bread. Then takethe set-aside dough, add more flour and water but no more yeast, let it rise,  set a bit aside and make bread with the remainder. Repeat. Your starter will slowly sour from wild yeasts in your kitchen. I did it this way.
