YasminSalaya Posted April 26, 2013 Share Posted April 26, 2013 ...do you think there are of one of the many Indian buffet restaurants letting someone 'borrow' the restaurant for a while and turn it into somewhere people reaaaaally want to eat!?I have a brilliant chef friend who was offered a kitchen space in Hackney whereby the owner covered the drink and my friend was to deal with the food. Unfortunately this fell through. "I'd guess unlikely on LL. They'd surely fear your losing them any reputation they may have. You can't just take over their location, laying all the / risk and consequences on them. Who'll pay the ?1000's in rent per month while chef friend experiments with the locals ? Why not try getting a track record from the back of a van, and then move into cheap premises. There are a couple of good quality Indian restaurants but some of the others are not. It's so sad to walk past them, particularly mid-week when they have 1 table in or no customers at all. My friend was going to pay the owner 50% of the food profits to cover rent of the kitchen he was offered.I do know some others that do a kind of pop-up in pubs that have been very popular. Agreed, it'll be best to go in and ask at the restaurants themselves though. I just posted on here to get opinions whereas he'll be the one asking around. Not sure whether street food fits his style but then the Northcote road market is going from strength to strength and would be a good starting point.
