Also the large leaves are edible and excellent for using instead of vine leaves.Worth reading the comprehensive Wikipedia page.These are low calorie as they do not contain digestible sugars. They are great raw in salads or cooked. They retain their crunchiness when cooked, rather like water chestnuts.They grow about 150cm and need room in the soil to produce their tubers.
