Short version that claimant's lawyers would argue: because the stuff had been all over the floor all night, and part of running a pub is sweeping and mopping the floor when there are obvious risks so that people don't slip and brain themselves. Same reason why Tesco cleans up the slippery wet lettuce leaves from the veggie aisle etc.
