Ah bless him ( micro-pickles that is)

Rabbit.

We cooked this on a large scale (something like 2000+ portions over 3 days) last year

The rabbit is way too boney to fiddle about trying to fillet, so this is how we did it

Portion the carcass into saddle and fore plus the rib and belly, cut these again in half down the middle. Total =6 pieces.

Coat the meat in Flour, Mustard Powder plus S&P. Then brown in a tray with mirepoix (inc celeriac)

Button or wild mushrooms + a few smokey lardons

Ale or Cider is good, as is a flash of cream as d_c suggests

Once braised, slip the meat from the bones (close fitting rubber glove do well here)

Proceed as you will to Pie Making...

Flat Leaf, Thyme , or Sage is my pref

. . . . . . . . . . . . . . . . . .

Huguenot is a d*ck.

Huge is a duck!?

Well that explains the interest in omnivorous activities and the last shopping list he dropped before skipping to the Malay peninsular:

?Small fish and fish eggs

?Snails, worms and molluscs

?Small crustaceans

?Grass and weeds

?Algae and aquatic plants

?Frogs, salamanders and other amphibians

?Aquatic and land insects

?Seeds and grain

?Small berries or fruits

Oh, and a new tube of bill-wax.

Well D_C, I was thinking pretty much that - cider (with Rosie!) bit of cream, tarragon.

Problem is that it has to be wild, so I'm going to head to Borough I think tomorrow and see what they've got. If no wild rabbit, I'll see what is wild and have to build the meal around that. The curse of principled friends, eh?

    • Hello All, I'm after sun hats for adults some with physical and learning disabilities who enjoy outdoor activities with an organisation I volunteer with. If you have any caps, bucket hats, or aussie type sun hats that you no longer use or would like to pass on., any condition...I know some very appreciative peeps who would be very grateful. If you need info then please DM me. Thanks for reading.
    • I had the same thing happen about a year ago... a couple of times in fact. I obviously react a lot less to posts than I used to because it has'nt happened again!
    • The link below has further information suggesting that the shop demolition and square redevelopment is funded separately from the station upgrades, so will go ahead:   https://www.ianvisits.co.uk/articles/peckham-rye-stations-step-free-upgrade-has-been-put-on-hold-82360/
    • Last time the toilets were out of operation in the station M&S we were all told to go out and up to Sainsbo! Certainly didn't close (I'm not suggesting that's the thing the library should do!)
