We cooked this on a large scale (something like 2000+ portions over 3 days) last yearThe rabbit is way too boney to fiddle about trying to fillet, so this is how we did itPortion the carcass into saddle and fore plus the rib and belly, cut these again in half down the middle. Total =6 pieces. Coat the meat in Flour, Mustard Powder plus S&P. Then brown in a tray with mirepoix (inc celeriac)Button or wild mushrooms + a few smokey lardonsAle or Cider is good, as is a flash of cream as d_c suggestsOnce braised, slip the meat from the bones (close fitting rubber glove do well here)Proceed as you will to Pie Making...Flat Leaf, Thyme , or Sage is my prefOh and ....."What time we eating..(?)"Netts(tu) Link to comment https://www.eastdulwichforum.co.uk/topic/22805-dear-ed-omnivorous-foodies/page/2/#findComment-535741 Share on other sites

EatsDulwich
There's a stall on Brockley Market which sells game and rabbitt. Not sure if it's wild rabbit. Try contacting the organisers who can check with the stall holder for you: Brockley Market. maxxi
Huge is a duck!? Well that explains the interest in omnivorous activities and the last shopping list he dropped before skipping to the Malay peninsular: ?Small fish and fish eggs ?Snails, worms and molluscs ?Small crustaceans ?Grass and weeds ?Algae and aquatic plants ?Frogs, salamanders and other amphibians ?Aquatic and land insects ?Seeds and grain ?Small berries or fruitsOh, and a new tube of bill-wax. RosieH
Well D_C, I was thinking pretty much that - cider (with Rosie!) bit of cream, tarragon.Problem is that it has to be wild, so I'm going to head to Borough I think tomorrow and see what they've got. If no wild rabbit, I'll see what is wild and have to build the meal around that. The curse of principled friends, eh?
