Since I am moving to ED (again) I figure its time to restart this thread for a few more questions I have:

What is the benefit (perceived or otherwise) of 'aged beef'? I see ads for 21 day aged beef and it strikes me as... unhealthy.

Someone is in a full-on window punching, screaming rage on public transport. Mock or show fear? I ask because in San Diego those people were generally mocked off trolley, bus, etc. but I dont see that as much here.

Iain Duncan Smith -- whats his deal?

"Aging is the process during which microbes and enzymes act upon the meat to help break down the connective tissue, for the sake of making the aforementioned meat object more tender." Even in the US, beef and most red meat is aged - although maybe not for 21 days - as ageing increases flavour and digestibility. I understand that instead of dry-aging or hanging which is the European way, they stick their beef in a plastic bag while ageing to keep the moisture in.

Hi - come and join me at the Gowlett on a Friday evening - I'm always there then at the bar from 8pm onwards (glasses and clean shaven amongst a sea of beards).
