For just chips - the chinese take away Hong Hong on Grove Vale does good thick crisp chips.

The fish and chip shop opposite what used to be Harvester, I think it's called Two Brothers. Good price and portion size!

If looking for fries (rather than chips) to eat with mussels, I would go with MeatLocker washed down with something from HB&B.
