The key is in the cooking.


The (Heinz) beans should be cooked over a low heat for at least fifteen minutes until started to clag and break down a bit.


At the beginning add Lea & Perrins, HP and a small hit of (Colman's) English mustard.


Serve on a thick slice of granary toast.


A meal fit for Prince.


People who don't like Bs on T tend to be the sort of nimrods who micrcowave the beans and use them to crown a couple of half heartedly singed slices of Mothers Pride.

Well, truth is that I don't have a recipe as such. It's my own thing and it's something I make in the summer when I have a glut of tomatoes on my allotment. But basically, all I do is this...


Fry some onions, garlic, celery, fresh chillis and paprika in olive oil till onions turn translucent and add some basalmic vinegar to make it sweet/sticky. Add a teeny bit of tom. puree, worcs. sauce, some muscovado sugar, any herbs (I use thyme, basil, rosemary, parsley and bay leaves), haricot beans and tons of fresh tomatoes. Then cover the lot with water. Cook slowly for up to 4 hours on top of the cooker. You need to keep returning to give the concoction a good old mix and to prevent it from sticking.


I have no rules and no measurements, just add everything according to personal taste: I'm quite heavy on the garlic, chillis and tomatoes.


I've probably forgotten something, but that's more or less it.
